Marinated Mushrooms

One of my most favorite things in the world is mushrooms, I LOVE mushrooms!  But fresh mushrooms from the store, especially the gourmet varieties can be super expensive…but for this reason also, they typically sit on the shelf past their “sell-by” date and so the grocery store puts them on clearance and that’s when I buy them all up and make batches of these delicious marinated mushrooms to keep in the fridge for snacking.  I typically eat low carb and these are perfect paired with some olives, homegrown homemade pickled peppers (both spicy and sweet) and homegrown homemade goat cheese!  These last indefinitely when stored in the fridge 🙂

All you need is:

  • 1/3 c. Red Wine Vinegar
  • 1/3 c. Extra Virgin Olive oil
  • 1 med.-lrg. sized onion, thinly sliced
  • 1 tbsp. fresh from the garden parsley or thyme, finely chopped
  • 1 tsp. moist grey sea salt
  • 2 cloves garlic, crushed in a garlic press or finely minced
  • 1 lb. of mushrooms sliced, any type or mixture of types

Mix everything together in a big pot and let simmer for about 10 minutes or so (the smell is heavenly!).  Dump into a large bowl, cover, chill and then feast!
